Italian Bread Machine Bread Recipe

Crispy on the outside and soft on the inside, this bread flecked with herbs, is an almost identical version to the bread served at the popular restaurant Romano’s Macaroni Grill.
- 1 ½ tablespoons sugar
- 1 ½ tablespoons rosemary
- 1 tablespoon yeast
- additional rosemary (for garnishing)
- salt (to garnish)
- ¾ cup water
- 2 tablespoons olive oil
- 2 cups flour
- 1 tablespoon salt
- Place the ingredients, according to the manufacturer’s directions into your bread machine.
- Set the machine to “dough cycle” and wait (this takes about ½ hours for a full cycle on most machines).
- Remove the dough from the machine when the cycle is complete and place it on a lightly greased baking sheet.
- Shape the dough by hand into a rectangular mound, spreading it thin, maybe an inch or two of thickness.
- Cover the dough and let it rise in a warm place for about an hour or until it has doubled in size. (This is a good time to go ahead and turn the oven on to preheat).
- Brush with a little olive oil, sprinkle with rosemary and salt if desired.
- Bake at 375°F for about 20-25 minutes until the crust is golden and crispy.
- Serve with olive oil flavored with fresh ground pepper.

I found this was too much salt. For a single loaf recipe like this a teaspoon would suffice. The rosemary was a great addition and this smells wonderful when it bakes.
