Italian Chicken Scarpariello Recipe

Italian Chicken Scarpariello Recipe

Ingredients:
1 1/2 lbs boneless skinless chicken breasts
1 teaspoon poultry seasoning
salt and pepper
2 red bell peppers, cut in 1-inch pieces
2 tablespoons olive oil
4 garlic cloves, chopped
3 hot cherry peppers, drained and chopped
1/2 cup chicken broth
1/2 cup dry white wine
2 tablespoons hot pepper juice, from jar
1/4 cup Italian parsley, chopped

Preparation Instructions:
Heat a large, heavy skillet over medium-high heat. Cut the chicken into large chunks and season with poultry seasoning, salt and pepper. Add one tablespoon oil to the hot pan. Put the chicken in the pan, leaving unturned for about 2-3 minutes. Brown for about 3 minutes on each side, then remove from the pan. Add the garlic, hot peppers and bell peppers to the pan. Saute for about 5 minutes, tossing and turning frequently. Add the wine to the pan and reduce for about 1 minute. Scrape up the pan drippings. Add the chicken broth and bring up to a boil. Set the chicken back into the pan. Toss the parsley with the chicken and peppers, and cook the chicken through, for about 2-3 minute. Stir in the pepper juice into the pan. Serve over orzo.
