How to make ravioli | Cooking vlog with twins (VIDEO)

Today our favorite twin sisters from the beautiful island of Cyprus will show us how to make a home made ravioli with basil sauce.

Recipe:

Ravioli with salmon and basil sauce (20 ravioli)

For the dough:
▪ 3 eggs, room temperature
▪ 1-3/4 cup flour (farina 00 or Pasta Flour)

For the filling:
▪ 2 leeks
▪ 3-4 spring onions
▪ 100g smoked salmon
▪ zest of 1 lemon
salt and pepper

For the basil sauce:
▪15 g of cashew nuts (you can also use other type of nuts like pine nuts or almonds)
▪50g basil
▪ 20g sun-dried tomatoes
▪50g extra virgin olive oil
▪100g water boiled water (from the one used to boiled the ravioli)
salt and red pepper cayenne


Step 1 (make the dough):
Pour the flour into a bowl
Make a hole and add the 3 eggs
Begin kneading with your hands until all ingredients are mixed well
The dough has to be slightly wet but not sticky
(Add some water or flour if needed)
Wrap your dough in a plastic film and let it rest for 20 minutes.

Step 2 (make the filling):
Cut the salmon into big pieces
Cut leeks and spring onions
Cut the dill
Take the zest of the lemon
Put all the ingredients in the food processor and add salt and pepper
Pulse until you get a smooth and homogenous mixture
Put the mixture in a bowl

Step 3 (assemble the ravioli):
Cut the pasta dough into two pieces.
Flatten each piece of dough by using a rolling pin(or a pasta roller).
Continue rolling until you get two really thin strips of dough (around 10 cm wide each).
Once the 2 layers are ready and some flour.

First way ( with using a “ravioli maker”/ “ravioli plate”):
Lay the first layer of the dough on the ravioli-maker tray
Place the second tray on top to stretch the dough to shape the entries for the filling
Add the filling with a teaspoon
Add some water with a brush on the edges to make sure that the pasta will stick together
Once you finished add the second layer of the dough
Start rolling on top of the tray with a rolling pin in order to seal and cut the ravioli
Gently remove the ravioli from the tray

Second way ( with using a pasta cutter):
Lay the first layer of the dough
Add the filling with a teaspoon (keep around 3cm between each piece)
Add some water with a brush on the edges to make sure that the pasta will stick together
Add the second layer of the dough
Shape and cut the ravioli by using a pasta cutter

Step 4 (make the sauce):
Cut the basil and sundried-tomatoes and put them in the food processor
Add the nuts, olive oil red pepper and salt.
Pulse until you get a smooth and homogenous mixture

Step 5
Add the ravioli in boiling water for 3-4 minutes
In a different pan put the basil sauce and add around 100g of the ravioli boiling water and let it cook for 2-3 minutes
(for extra flavor you can add some additional pieces of sundried tomatoes and white wine )
Once the ravioli are ready add them in the sauce and stir gently.
