Italian Chicken Noodle Soup Recipe

1 teaspoon ground coriander
1 (16 ounce) box tortellini
1 teaspoon cayenne pepper (optional)
fresh ground pepper
1 teaspoon sweet basil
4 carrots sliced
2 garlic cloves pressed
1 teaspoon oregano
4 stalks celery
2 onions diced
1 (16 ounce) box frozen spinach
4 chicken breasts or 4 chicken thighs
kosher salt
chicken stock
2 (14 ½ ounce) cans diced tomatoes
1 (16 ounce) container of fresh sliced mushrooms

Preparation Instructions:
After cooking the chicken, cut it into pieces. Chop the veggies and throw them into the pot of chicken stock. Start out with 4 cans of chicken stock and if needed add one or two more cans. Add the already cut up chicken. Add spices. Let it come to a boil, then take down to simmer. Add the noodles. I usually cook the noodles seperately and add them when done. Eat.
