Cheese Pineapple recipe – Ananas di formaggio
|Pineapple but made out of cheese! We could also call it faux mascarpone pineapple. It will be a tasty appetizer to toast to Christmas with friends. Follow the recipe step by step, the realization is simple and the surprise effect guaranteed.

Cheesy Pineapple is a fun and creative recipe for bringing an appetizer to the table to accompany a glass of bubbly, at the upcoming Christmas parties.
In this recipe we used about a quarter of the pulp of a well ripe and fragrant pineapple. With the remainder you can prepare pineapple and cooked wheat cake, creamy pineapple cake or skewers of pineapple, fontina cheese and stuffed olives.
To accompany the pineapple cheese you can make spelt and cumin crackers or kamut crackers.
1 pineapple
350 g mascarpone cheese
150 g almonds
3 dried figs
50 g raisins
HOW TO PREPARE CHEESE PINEAPPLE:
1. Before you start making the cheesy pineapple, soak the raisins in warm water for at least half an hour.
Remove the crown of the pineapple and the base. Divide it in half, remove the central core and finally cut the pulp into small cubes. For this recipe we used about a quarter of the pineapple pulp, but you can increase the amount to taste.
2. Cut the figs and, in a bowl, mix them with the pineapple, raisins squeezed and dried, zola cheese and mascarpone cheese.
3. Use one half of the emptied pineapple as a mold, it will be easier to give the regular shape to the cheese filling.
Place in the refrigerator for about half an hour.
4. After this time, the cheese filling will have hardened and taken on the rounded shape characteristic of pineapple. Place the pineapple on a serving plate and decorate with the almonds.
To complete the dish, put the pineapple crown back on top.
