Italian Grilled Cheese (VIDEO)

This Grilled Cheese packs a punch! Simple and fresh ingredients come together to make this one of my favourite sandwiches of all time. You’ve got to try it 😀

Note: If you don’t have an indoor grill, you can toast your sandwich in a pan on medium-high heat for 3-4 minutes on each side.

INGREDIENTS

1/2 cup, Basil Leaves
1/4 cup, Olive Oil
2 tbsp, Grated Parmesan
1 clove, minced Garlic
1 tbsp, Almonds (Or Walnuts, Pistachios, etc)

Italian Bread cut into 1 inch slices
Thinly sliced Mozzarella
Ripe Tomatoes, cut into rounds
Arugula
Salt to taste

Combine Basil, Olive Oil, Parmesan, Garlic, Almonds, and a pinch of Salt in a Blender to create Pesto. Whiz until pureed.

Brush Olive Oil lightly on one side of each slice of bread. Spread Pesto on the opposite side of both slices.

Layer Sliced Mozzarella on one side of bread, covering the entire surface. Top with Tomatoes, and season with a sprinkling of salt. Lastly, add Arugula, and top with other slice of bread.

Place in a hot Indoor Grill/Panini Press/Pan and cook for 3-4 minutes, or until bread is golden and toasted, and cheese has melted.

Eat right away! 😀
