Italian Shrimp Scampi with Snap Pea Rice Recipe (VIDEO)

Shrimp Scampi with Snap Pea Rice

INGREDIENTS:

Scampi:

2 pounds fresh uncooked cleaned shrimp
I used 21-30 count
4 tbsp butter
4 tbsp extra virgin olive oil
1 tbsp minced garlic
1 thinly slice lemon
1 zest of lemon
1 cup white wine
1/2 cup chopped parsley
1/4 cup chopped green onions
salt and pepper to taste


In a skillet on medium high add butter and olive oil. When butter is melted add the shrimp and minced garlic. Cook for 3-4 minutes until the shrimp turn pink and remove from the pan.

In same skillet with butter/evoo add lemon slices, lemon zest, salt and pepper and white wine. Bring to a boil and reduce for 2 minutes. Add parsley, green onions and shrimp back into the pan. Give a stir to combine and it is done.

Snap Pea Rice:

2 cups cooked white rice
1 cup diced onion
1 cup diced red bell pepper
1 cup fresh cleaned snap peas
1 jalapeno pepper deseeded and finely chopped
2 tbsp soy sauce
1 tbsp minced garlic
salt and pepper

In skillet/wok add 2 tbsp olive oil, onions, red bell pepper, jalapeno pepper and snap peas.
Stir and cook for 3-5 minutes until veggies become tender. Add minced garlic and cook foranother minute. Add rice and soy sauce.
Stir and cook for 1-2 more minutes.

Serve scampi along side or on top of rice.
