Roasted Eggplant Vegetarian Sandwich Recipe – or Veggie Burger – Whatever You Call It (VIDEO)
Roasted Eggplant Vegetarian Sandwich Recipe is presented in this video. This can be also considered a veggie burger and it has BBQ taste thanks to the crunchy breading. Roasted eggplant is yet another great way to substitute meat and make your sandwich healthier. This vegetarian sandwich is very easy in preparation. While you will be roasting eggplant in the oven you can place rolls there too. Just keep an eye on them because it doesn’t take much time to toast them. The secret to the tastiest eggplant patty is to cover it in BBQ chips breading – it couldn’t be any easier. Just crush some of your favorite barbeque chips and boom – your breading is ready. The breading will stick to the sauce that you have covert the slice of eggplant. It will give this wonderful taste to those veggie patties and amazing crunchiness. I have chosen sandwich skinny whole wheat rolls to save on calories and carbs but you can easily substitute them with any buns of your choice. I kept this recipe pretty simple with toppings so it retains its classy vibe of the old school burger. This recipe is something between a burger and a hot sandwich so call it whatever you want 🙂 For me it is just the best eggplant sandwich! 🙂

Ingredients (SERVING FOR ONE SANDWICH):
1 SANDWICH SKINNY WHOLE WHEAT ROLL / ANY ROLL OF YOUR CHOICE
1 THICK SLICE OF EGGPLANT
1 TOMATO SLICE
1 LETTUCE LEAF
1 SLICE OF RED ONION
1 MOZZARELLA CHEESE SLICE
3 tbsp BBQ CHIPS (CRUSHED)
OIL FOR ROLL AND EGGPLANT BRUSHING
SAUCE:
1 tsp MAYO
1 tsp FRENCH DRESSING
Cooking instructions:
1) Oil sandwich rolls and toast them. Prepare sauce using mayo and drench dressing. Spread half of the sauce equally on each side of the roll. Save the rest for later.
2) Salt and oil slice of eggplant. Bake for 20-25 minutes at 400 F / 205 C. After roasting cover it with the leftover sauce. Crush BBQ chips and place them on the plate. Bread slice of eggplant in crushed barbeque chips. Place covered in chips slice of eggplant on the roll.
3) Add as follow on the top of eggplant: mozzarella cheese, tomato, red onion, the top of toasted roll. It is ready to be served!
