Easy Vegan Pasta Recipes (VIDEO)

RECIPES:

Maple Curry Pasta:
3 tbsp almond butter
1 tbsp tomato paste
2-3 tbsp maple syrup or liquid sweetener
1 tbsp soy sauce
2-3 tsp curry powder
1 tbsp lemon juice
1/2 cup non-dairy milk added as needed
chopped veggies of your choice
2 cups cooked pasta

Southwest Pasta Salad:
2 cups cooked pasta
1/4 to 1/2 cup vegan mayo
1/2 cup corn
1/2 cup black beans
1 tomato, diced
1 tsp maple syrup
1-2 tbsp fresh lime juice
1 tsp chili powder
1/2 tsp cumin
Optional 1/4 tsp onion/garlic powder
avocado added in at the end

Creamy Lemon Chick’n Pasta:
1 cup cashews soaked in 1 1/2 cups water
2 tbsp lemon juice
1/4 tsp garlic powder
1 tbsp nutritional yeast
1 tsp dried parsley
salt & pepper to taste
vegan chicken
green peppers, sliced
2 cups cooked pasta
