Arancini Recipe (Fried Rice Balls) They Make the Perfect Appetizer (VIDEO)

Fried Rice Balls YUMMY!!! also known as Arancini. They are stuffed rice balls which are coated with bread crumbs and then deep fried. They are usually filled with mozzarella, and peas. A number of regional variants exist which differ in fillings and shape.So easy and perfect for any celebration makes a great little appetizer. Here is my version.

Ingredients:
Filling:
2 cups of your favorite uncooked rice
4 cups liquid
cooked rice
1 1/2 cups of mozzarella cheese (reserve 1/2 of the mozzarella cheese)
1/2 cup finely grated Parmesan
2 eggs, at room temperature
Spices of your choice see variations below.
corn oil, for frying.

Coating:
1/1/2 cups Italian bread crumbs
1/4 cups of Parmesan cheese
3 eggs
In a large heavy-bottomed saucepan or deep fryer, pour in enough oil to fill the pan about 1/3 of the way up. And allow to heat to 350 degrees F
Directions:
Basic Rice:
Cook Rice follow the directions on the package.
Breading: In a medium bowl put the Italian bread crumbs in a medium bowl add the Parmesan cheese. Set aside
In a separate bowl crack 3 eggs and mix well

Filling: In a medium bowl, combine the cooked rice, Parmesan cheese, eggs. and spices mix well.
Form the rice balls:
With damp hands, take small amount of the rice mixture and form into 1 3/4-inch diameter balls. Make a hole in the center of each ball and insert a bit of the remaining mozzarella cheese. Cover up the hole to completely enclose the cheese.
Roll the balls in the egg mixture and then into the breading to coat.
In a large heavy-bottomed saucepan or deep fryer, pour in enough oil to fill the pan about 1/3 of the way up.

Seasoning Variations:
Italian:
1 tablespoon dried parsley, 1/2 tsp dried basil

Cajun:
1/2 tsp cayenne pepper
14/ tsp cumin
1/4 tsp garlic powder
1/4 tsp thyme
1/4 tsp paprika

For Poultry
1/4 tsp dried sage
1/2 tsp dried thyme
1/4 tsp garlic powder
