Recipe:
Mascarpone Cream Mix
3 egg yolks
60g caster sugar
500g mascarpone
40ml Strega
20ml rum
Small savoiardi biscuits – about 20-30
6-9 cups of espresso coffee

Italian Meringue Mix
100ml water
250g caster sugar
125 mls egg whites

Chopped chocolate to add between layers
Dutch Processed Cocoa to sift on top
