ZUPPA ROMANA Recipe (VIDEO)

The name of this recipe may sound italian, but this is a traditional cake recipe from Germany, to be eaxct from Munich. The preparation is easy. If you don’t have a baking frame you can also bake the sponge inside a loaf pan and then cut horizontal into three layer. If you do this the baking temperature change to 356°F/180°C and 25 minutes. Of course you can drop the rum if you do not like alcohol.This cake will taste great, with and
without alcohol.

Recipe:

Soaked cherries:
– 1 cup (200 g) cherries (canned)
– 1/2 cup (100 ml) rum
– (keep also 1/2 cup cherry juice)

Water sponge mixture:
– 2 eggs
– 2 tbsp hot water
– 1/2 cup (100 g) Zucker
– 3/4 cup (100 g) flour
– 1 tsp baking powder
– lemon peel

Baking:
– Baking plate with baking frame
– Lay in baking paper
– 12 x 12 inch (30 x 30 cm)
– 410°F (200°C) (preheated)
– bake for 10 min until golden yellow

Tips for preparation:
– You can also use a loaf pan,
then 25 minutes (356°F/180°C),
then cut into three stripes/flan cases

Vanilla cream:
– 2 egg yolk
– 2 tbsp cornstarch
– 1/4 cup (50 g) sugar
– 5/3 cups (400 ml) milk
– 1 vanilla pod, sliced
– 2 leaves gelatin

Finishing:
– 5/3 cups (400 ml) whipping cream
– 1/4 cup (50 g) sugar
– 1 tbsp vanilla sugar
– decoration cherries

Tips for preparation:
– Let soak cherries overnight
– Mix the rum juice with cherry juice.
– Version without alcohol:
only use cherry juice for soaking.
– Cover with (aluminium foil) and
let soak overnight.
