These things are falling off the bone, good to the last bite de-lec-table! Make these for Sunday dinner, a small dinner party, or even on a weeknight. Just prepare to be comforted, because this is the ultimate comfort food. Recipe as follows;

vegetable oil for browning (I used coconut oil)
4-5 lbs of beef short ribs
4 medium carrots diced small
1/2 of a medium red onion diced small
1 large garlic clove minced
1/4 tsp of dried thyme
1 tsp of kosher salt
1/2 tsp of black pepper
2 tbsp of tomato paste
2 cups of dry red wine (make it wine you’d enjoy drinking)
2 cups of beef broth/stock
a deep roasting pand with a lid works best for this recipe
Cook at 350 degrees (f) for 1 hour then drop temperature to 325 degrees {f} for 1 1/2 hours til tender and decadent

Polenta
1 cup of dry polenta
2 cups of water
2 cups of milk
2 tbsp of butter
1/4 cup of grated parmesano-reggiano cheese
