How to Make Tiramisu! Simple Cooking

Ingredients for Homemade Savoiardi (sponge fingers):
4 eggs
70 gr sugar
60 gr starch
75 gr flour
1 tbsp honey
2 tsp powdered sugar
salt

Ingredients for Tiramisu
4 eggs
2 tsp vanilla
450 gr mascarpone
1 cup hot espresso coffee – strong
cocoa, for dusting


Istructions:
1. Separate the eggs. Whisk the egg yolks with honey. Beat untill very light coloured. This will take about 5 minutes.
2. In a clean bowl beat the egg whites until they hold soft peeks. While beating, slowly add the salt, sugar and the remaining sugar untill combined.
3. Gently fold the beaten egg whites into the egg yolk mixture.
4. Sieve the flour and the starch over the egg mixture and gently fold it in.
5. If you have the pastry bag, you will be able to make sponge fingers. I haven’t, so I decided to make biscuits and then I cut it.
6. Bake at 190 C for about 15 minutes until firm to the touch and golden.
7. Separate the eggs.
8. Beat egg yolks and vanilla in a large bowl with electric beaters until pale and thick. Add the mascarpone, mix it gently.
9. Beat egg whites in a medium bowl with electric mixer until soft peaks form. Using a large metal spoon, gently fold eggwhites into the mascarpone mixture.
10. Dip enough biscuits into the coffee mixture to cover the base of a dish. Cover the biscuits with one-third of the mascarpone mixture. Repeat layers 2 times, ending with the cream. Cover with plastic wrap and refrigerate for at least 2 hours. Dust generously with cocoa and serve.
