Italian Ricotta Cheese Cookies

COOKIE RECIPE:
2 cups sugar
1 cup margarine or butter, softened
1 container (15 ounce size) ricotta cheese
2 teaspoons vanilla extract
2 large eggs
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

ICING:
1 1/2 cup confectioners’ sugar
3 tablespoons milk
Holiday sugar sprinkles.
Cream butter & sugar first w/mixer.
Then add wet ingredients w/mixer.
Then add dry ingredients until fully mixed & soft dough is formed.
Drop on ungreased cookie sheet and bake for 15 mins @ 350 degrees.
Cool on wire rack then combine milk & powdered sugar, spread icing over cookies & add sprinkles.
