On this episode of Coco & Vine Bites we put a fun twist on the traditional Italian recipe favorite of Zeppole or Sfingi. Zeppole is a treat found at many Italian festivities. Traditionally, it’s often served in a savory style with fillings like tomato, olive, and anchovy, or served just as a dough ball dusted with icing sugar. We couldn’t resist putting a decadent twist on the old Zeppole recipe by stuffing them with fillings like Nutella, Ferrero Rocher, Blue Cheese, and Gorgonzola!
Zeppole Dough Recipe:
2 cups plain flour
2 teaspoons dry yeast
1 teaspoon salt or to taste
2 eggs
2 cups warm milk
Frying oil (Olive, vegetable, rice bran)
– Mix together the dry ingredients in a bowl
– Stir in the 2 eggs
– Slowly add in the warm milk
– Stir zeppole dough until it’s the consistency of think cake batter
– Allow to rest and rise for 1 to 2 hours
– Heat oil to 190C/350F
– Fill dough with fillings
– Fry until golden brown
