Ingredients:

  • 500 g of durum wheat flour (You can use all-purpose flour if durum wheat flour is unavailable)
  • Salt
  • 300 g of tomatoes
  • 200 g of pork meat (Chicken can be a substitute if pork is not preferred)
  • 50 g of lard (Butter or olive oil can be used as a replacement)
  • 1 shallot (A small onion can be used if shallots are hard to find)
  • 1 carrot
  • 1 celery stalk
  • Marjoram (Oregano can be a substitute if marjoram is unavailable)
  • Grated pecorino cheese (Parmesan can be used as a replacement)
  • Pepper

Preparation Instructions:

  1. Prepare the Pasta: On a work surface, arrange the flour in a well shape, add a pinch of salt and the necessary water to knead and obtain a homogeneous mass. Roll out some sheets from it, let them dry for 10 minutes, roll them up and cut them into tagliolini. Spread them out on a cloth and let them dry further.
  2. Prepare the Sauce: In a pan, heat the lard and when it has softened a bit, add the finely chopped shallot, carrot, and celery. Let them color and then add the meat cut into small pieces. Once everything is well browned, add the peeled and chopped tomatoes. Cook for about 10 minutes on high heat, adjust salt and pepper, remove from heat and add marjoram.
  3. Cook the Tagliolini: Boil the tagliolini in salted water, drain them, and transfer them to the pan with the sauce. If necessary, add a little pasta cooking water. Sprinkle with pecorino cheese, transfer to a serving dish, and serve immediately.
