Italian Open Sandwich

Olives and olive oil are commonly used in Italian cuisine, and hence the Italian open sandwich too uses black olives lavishly. Once you have the ingredients ready, this recipe can be prepared in a jiffy as the baking time is also relatively low.

Preparation Time: 10 minutes.
Cooking Time: Nil.
Makes 4 open sandwiches.
Baking Temperature: 180°C (360°F).
Baking Time: 15 to 18 minutes.

For the bread
2 hot dog rolls
Melted butter for brushing

To be mixed into a topping
1 tbsp olive oil
1 tbsp dried oregano
½ cup blanched, peeled, deseeded and chopped tomatoes
1 tbsp chopped garlic (lehsun)
1 tbsp dry red chilli flakes
½ cup grated processed cheese or mozzarella cheese
1½ tbsp deseeded and sliced black olives
½ cup capsicum cubes (red, yellow and green)
Salt to taste


For the bread
Cut each hot dog roll lengthwise into two and brush the bread halves with a little melted butter and place them on a greased baking tray and bake in a pre-heated oven at 180°C (360°F) for 4 to 5 minutes. Keep aside.

How to proceed
1. Divide the topping into 4 equal portions.
2. Place a portion of the topping over each hot dog halve, spread it evenly and bake in a pre-heated oven at 180°C (360°F) for 6 to 8 minutes.
Serve immediately.
