Today I would like to show you how to make home delicious Italian Pasta with Zucchini and Speck, or Bacon, or Pancetta. (Or you can substitute it with Chicken Breast and get Pasta with Zucchini and Chicken). This is a traditional Toscana recipe, simple, quick and full of flavour!

Recipe:

Serves 2 to 3

Prep time: 5 mins
Cook time: 15 mins

Ingredients:

160-200 g of Italian Pasta, Spaghetti or Linguine
1-2 Zucchini, sliced in 5 mm slices
50-100 g of Bacon or Pancetta (Speck in German ☺), cut in small cubes or slices. You can use as well Chicken Breast.
2-3 cloves of Garlic
1/2 tsp of Hot Chili Flakes
½ tsp of Italian or Provance Herbes Mix (or mix youself dry Herbs like Rosemary, Thyme, Oregano, Basil, Sage, Lavender)
1/2 cup of fresh chopped Parsley
Salt and Pepper, to taste
1 Tbsp of Olive Oil
1/2 cup of Freshly Grated Parmigiano Reggiano (parmesan cheese)
½-1 cup of Pasta Water (Water in which you cooked Pasta)
