Marinated anchovies, or “Alici Marinate” in Italian, are a traditional delicacy from the coastal regions of Italy, particularly popular in the Marche region. This dish is a testament to the Italian culinary tradition of preserving seafood to enhance its flavors. The anchovies are marinated in a mixture of vinegar and aromatic herbs, which not only preserves them but also imparts a tangy flavor that complements the natural saltiness of the fish. Over the years, various regions have introduced their own variations, adding ingredients like chili, garlic, or different herbs. However, the essence of the dish remains the same: fresh anchovies, marinated to perfection.

Ingredients:

  • 1 kg of fresh anchovies
  • 3/4 of white vinegar
  • Lemon zest
  • Bay leaves
  • Parsley
  • Olive oil

Note: If fresh anchovies are hard to find, you can use canned anchovies as a replacement, but make sure to rinse them thoroughly to remove excess salt.

Preparation Instructions:

  1. Clean the anchovies by removing their innards, cutting off their heads, and deboning them. Wash and pat them dry with a kitchen towel.
  2. Place the anchovies in a bowl, adding some bay leaves, thinly sliced lemon zest (making sure to avoid the bitter white pith), and a bunch of parsley.
  3. Pour the vinegar into a saucepan and bring it to a boil. Pour the boiling vinegar over the anchovies, ensuring they are fully submerged. Set them aside and let them marinate for at least 3-4 hours.
  4. When ready to serve, remove the herbs, drain the anchovies carefully, and arrange them on a serving plate. Season them lightly with salt and drizzle with olive oil.
