Pork Scallopini with Lemon Caper Sauce (VIDEO)

Serves: 4

Ingredients:
1 Farm Promise Pork Loin Filet, sliced ¾ inch thick, pounded ¼ inch thick
¼ cup flour
2 Tbsp olive oil
½ cup white wine
6 Tbsp butter
1 Tbsp capers
2 lemons, juiced
2 Tbsp chopped flat leaf parsley
Kosher salt and ground pepper

Directions:
Season pork with ½ tsp salt and ¼ tsp of pepper. Coat in flour.
Heat olive oil in a large skillet over medium high heat. Brown the pork, 2-3 minutes per side. Transfer to a baking pan.

To make the sauce: crush capers with the back of a spoon.
Melt ½ tsp of butter in skillet over medium high heat until butter foams and is golden; sauté capers until fragrant, about 15-20 seconds. Add lemon juice. Bring to a simmer. Add wine, stirring frequently until liquid is reduced by one-third, 1-3 minutes. Season with salt and pepper.

Remove from heat. Stir in remaining cold butter to lemon caper mixture until butter is completely melted and sauce is shiny and thick, about 1 minute.

Add pork back into pan and sprinkle with parsley.

Serve over pasta or with roasted potatoes.
