|ITALIAN CHICKEN BREAST
Preheat: 4 minutes | Cook: 6 minutes | Servings: 2 | Container: Long Grill Pan
• 2 (4 oz) boneless skinless chicken breasts
• Salt and pepper, to taste
• 1 teaspoon Italian seasoning
• 1 medium vine ripe tomato, diced
• ¼ cup shredded mozzarella cheese
• 2 tablespoons chopped fresh basil
DIRECTIONS
1. Preheat RangeMate Long Grill Pan, without lid, for 4 minutes.
2. Season chicken with salt, pepper and Italian seasoning, then add to unit. Place lid on and cook 3 minutes.
3. Turn chicken over, replace lid and cook an additional 2½–3½ minutes.
4. Top each chicken breast, divided evenly, with tomato, mozzarella cheese and basil. Place lid on until cheese melts, about 3 minutes or until internal temperature reaches 165°F.
