Orecchiette with Broccoli and Sausage – traditional italian recipe (VIDEO)

Today at Cucina con noi we will learn how to prepare an autumn dish: orecchiette with broccoli and sausage. For 4 portions we will need: 500 gr of broccoli, 300 gr of sausage, 320 gr of orecchiette pasta, some chili pepper, 2 cloves of garlic, 4 spoonfuls of extravirgin olive oil, salt and, if you like it, 2 spoonfuls of grated pecorino cheese. We start cleaning the broccoli and we put on the stove a pot of water, which we will use both for the pasta and the broccoli. We remove the leaves and the stem and we cut the broccoli into smaller pieces. Then we remove the sausage peel and we break it into small pieces. Now we add the salt to the water and we put the broccoli to cook, after washing them. In the meanwhile, we start cooking the sausage: we put in a pan the oil, the smashed garlic and the crumbled chili pepper. When the garlic get golden, we add the sausage and we let it sear. We melt every now and then to avoid the meat from sticking to the pan; if we like it, we can pour a glass of white wine. Now the sausage is brown, so we can remove the garlic; we drain the broccoli when they are “al dente” and we combine them with the meat. We let the broccoli pan fry with the sausage, then we add a ladle of the broccoli water and we let them cook for 4 or 5 minutes. In the meanwhile, we put the pasta to cook in the broccoli water. We switch off the sauce pan and we wait for the pasta to be ready. When the pasta is “al dente” we switch on the stove and we combine the pasta with the sauce; we add a little of the pasta water and we let the pasta pan fry. Then we switch off, we sprinkle some cheese and melt. Our pasta is ready; we serve it hot and, if we like it, we add some more cheese.
