Ravioli di ricotta, Italian traditional recipe (VIDEO)

Today I propose to you a new recipe, ricotta cheese ravioli with tomato sauce. Let’s go and see which ingredients we need. 300 grams of very light egg puff pastry, 80 grams of grated parmesan, 300 grams of ricotta cheese, it’s better using the sheep one, an egg, 500 grams of tomato sauce, salt and pepper. Let’s visit our website to know more about the recipes of the tomato sauce and the egg pastry. Let’s prepare the mixture: we mash the ricotta cheese with a fork, we add the egg, some pepper, a little bit of salt and the two- thirds of the cheese. / Now we stir to mix the ingredients very well. Once the filling is ready, we can start to prepare our ravioli, so we paint the pastry surface slightly with a very little amount of water and we put the filling on the pastry in little piles at regular intervals, helping ourselves with a pastry bag.
Once we get to the middle, we roll the free part of the pastry up the filling. We try to get the air off, pressing slightly with our fingers. Then we press the pastries with a wooden spoon to join the pastries together.// At this moment, we cut the ravioli with a cog. // Now we arrange them on a tray covered with a kitchen towel./
We go on like this till we have used all the ingredients and the ravioli are ready.
Obviously dimensions can vary according to individual taste. At this point we heat the sauce and if we want to flavor it further, we add a knob of butter. Then we cook the ravioli and it will take us from four to five minutes, depending on the thick of the pastry and the size of the pasta. Once the ravioli are cooked, we drain them and we directly pour them in pan.// After having added a ladle of cooking water, we stir fry them on full heat , leaving them become tasty for a few seconds. Let’s serve our ravioli very hot with a sprinkle of grated parmesan. If you want, you can add some fresh basil leafs. Ricotta cheese ravioli are also very good simply seasoned with butter and parmesan. Goodbye everybody by Sonia and see you to the next video-recipe.
