Dwight gets pasta and pesto tips from Chef Theo Randall!

Chef Theo Randall of the Intercontinental Bangkok’s restaurant Theo Mio visits Bangkok and gives some tips on cooking pasta and making pesto. I hope you find it informative and that you give the pesto a try in a mortar and pestle as it was originally made. If you don’t have one you can of course do the same steps except into a food processor or blender.

Pesto Ingredients:
Italian Basil (2 handfuls)
Pine Nuts (1 handfull)
Garlic (one large clove)
Salt
Shredded Parmesan (1 hand full)
Olive Oil
A Little Water


Pesto Instructions:
1. Crush garlic and salt into a paste in mortar with pestle
2. Add two handfuls of basil on top and pound until it becomes a paste.
3. Add pine nuts and crush.
4. Add parmesan
5. Add a shot of water
6. Add 5 tablespoons of olive oil
7. Stir until creamy
8. Adjust to taste
Optional: Toss with pasta that’s just been cooked. Remember it doesn’t need to be cooked and to leave some fresh pesto and a bit of parmesan to top the finished dish with later.
