Minestrone Soup Recipe | Vegan | Low Fat (VIDEO)

INGREDIENTS

1 brown onion, diced
3 stalks celery, diced
2 carrots, diced
1 leek, diced
6 cloves garlic, minced
1 1/2 cups dry pasta
2 cans tinned tomatoes
2 cans red kidney beans, drained and rinsed
1 can chick peas, drained and rinsed
1 can borlotti beans, drained and rinsed
1 1/2 cups tomato paste
4 1/2 litres water
3 stock cubes (or sub 1 1/2 cups stock in place of some of the water)
3 springs thyme
1 sprig rosemary
1 bay leaf
salt & pepper to taste
