Bolognese Sauce (meat sauce) (VIDEO)

This video is for my classic bolognese sauce. This is the quintessential base for a great lasagna. This recipe is slightly different overtime I make it, but it is ALWAYS delicious. In the video I am making a double batch to freeze for later use; the ingredient list below is for a single batch, which is enough for a lasagne. You can use any conbination of ground meat that suits you for this sauce, I often use 2/3 lb each of ground beef, ground veal and ground pork; I have also used ground turkey and ground chicken.The ingredient list is below.

You will need a 3 quart sauté or heavy bottom soup/sauce pan over medium-mediaum high heat
INGREDIENTS

1 lb lean ground beef
1 lb ground pork sausage or sweet Italian sausage
1 28oz can of tomato product(pureed, crushed, or diced tomatoes all work well)
1/2 lb celery, chopped
1/2 lb carrots, chopped
1/2 lb onion chopped (1 med onion)
2 cups whole milk
1 cup dry wine (red or white)
2 oz tomato paste
4 slices bacon, finely chopped
3-4 cloves of garlic, finely chopped
3 tbsp butter
2 tbsp extra virgin olive oil.
1 1/2 tbsp salt
1 tbsp cracked black pepper
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp dried thyme
1 tbsp dried oregano

(optional) 2 tbsp brown sugar added after the tomatoes for a less acidic final product.
