Fresher than Fresh Italian Pesto (VIDEO)

Pesto always manages to surprise with it’s easy preparation and yet it’s incredible taste. The taste that results from the combination of fresh basil, pine nuts and Parmesan cheese sits perfectly with Aristotle’s quote: “The whole is greater than the sum of its parts.”

INGREDIENTS:
120 g Fresh Basil leaves (no stalks)
1 Large Clove of garlic
1 tsp. Sea Salt
1 cup Pine nuts
1 cup Olvie oil
150 g Parmesan cheese (freshly grated)


INSTRUCTIONS:
1. Chop garlic, salt & pine nuts in one go.
2. Chop basil leaves to a coarse paste.
3. Add olive oil & Parmesan cheese
4. Chop again for 10 seconds

TIPS FOR CHAMPIONS:
1. Use the food processor for only short time intervals. Both pine nuts and basil are very delicate and you don’t want to get them over mashed or over heated.
2. Use only very fresh ingredients. If your basil looks a bit tiered, cut the tips of its stalks (to expose a fresh part of the stalk) and leave them in cold water for 1-2 hours.
