Minestrone Soup
serves 4

Ingredients
2 tablespoons olive oil
2 garlic cloves, chopped
2 red onions, chopped
75g / 3 oz prosciutto, sliced
1 red bell pepper and
1 orange bell pepper,
seeded and chopped
400g / 14 oz can diced tomatoes
1 litre / 1¾ pints / 4 cups vegetable stock
1 celery stalk, chopped
400g / 14 oz can cranberry / borlotti beans, rinsed and drained
100g / 3½ oz / 1 cup shredded green leafy cabbage
75g / 2¾ oz / 1⁄2 cup frozen peas
1 tablespoon chopped fresh parsley
75 g / 3 oz dried vermicelli pasta
salt and pepper
freshly grated Parmesan cheese, to serve
