AMATRICIANA PASTA SAUCE: original RECIPE from ITALY

How to make the amatriciana pasta like a real Italian! The recipe is so simple you can make it at home in less than 20 minutes.

What do you need for 2 people
200 grams of pasta
150 grams of cured pork cheek (or pancetta)
300 grams of fresh tomatoes
100 grams of pecorino cheese
1/2 red pepper
salt
oil


Method
1. Cut the bacon into strips and put it to cook for a couple of minutes in a tablespoon of oil (years ago lard was used for this recipe!) and chili pepper: you will recognize the bacon is ready by the color which turns yellow when it’s done.
2. Remove the pan from the heat, pour the tomatoes (if you use tomatoes blanch, peel and crush them in advance and if you’re using jars just mash) and cook for 10 minutes then let the sauce stand.
3. Meanwhile boil the pastain salted water until it’s al dente, drain and pour into the pan with the sauce. Season the pasta by adding the grated pecorino cheese. Serve hot with pecorino cheese sprinkled over.
