Bruschetta with Tomato and Basil

Ingredients

6 Roma Tomatoes or 2 extra large tomatoes (cored, seeded and chopped)
1 Tbsp chopped fine garlic
3 Tbsp fresh basil leaves, chopped
2 Tbsp of balsamic vinegar
2 Tbsp. of extra virgin olive oil
Sea salt
Fresh ground pepper
Freshly ground Parmesan for garnish

1 French baguette bread or similar Italian bread
¼ cup olive oil

Directions

1. In a bowl mix chopped tomatoes, garlic, basil, balsamic, and olive oil, season to taste with salt and pepper. Set aside.

2. Preheat oven to 450 degrees. Slice the baguette on a diagonal about 1-inch thick slices. Place the sliced baguettes onto a sheet pan that has been lined with parchment paper. Next step is to drizzle olive oil all over the baguettes. Place the sheet pan into the oven and toast for about 5-6 minutes, until the bread just begins to turn golden brown. Then remove from the oven.

3. Place the bread on a serving platter. Top each baguette with some tomato mixture and garnish with fresh Parmesan. Be sure to top the bread right before serving or the bread might get soggy. You can also place the tomato topping in a bowl separately with a spoon for people to serve themselves over the baguettes.

Yield: Makes 24 small slices
