Caprese Salad

Servings: 4 to 6

4 large vine-ripened tomatoes (slices 1/4 inch thick)
1-pound mozzarella cheese
1/3 cup pesto or basil leaves
4 Tbs. balsamic vinegar
4 grape tomatoes (garnish)
Salt and pepper
Olive oil (if you use basil leaves)


Cut tomatoes and mozzarella cheese into thick slices (approx. 1/2 cm). On a plate, alternate layers of tomato and cheese by adding pesto (or you can also use basil leaves) in the middle of each layer. If you use basil leaves, you can add olive oil and balsamic vinegar. Add salt and pepper to taste to each layer.

At the end, you can garnish with basil leaves or sherry tomatoes. Gently remove the inside of the tomato discarding the seeds with a knife and a spoon, filling them with balsamic vinegar and pesto, or if you prefer, drizzle the salad with balsamic vinegar and olive oil. #MVCooking
