Lets talk olive oil. Fabio gives us basic hints on when to use extra virgin as opposed to pure or light when we’re cooking.

The three basic categories of olive oil are light, which is perfect for cooking with high heat. The pure is everyday oil,you use the oil that you use when you need to mix some other flavor with and the need for a strong olive flavor is not required. Extra virgin is like the Ferrari of olive oil. Good for finishing, good for light dressing you need that when you try to make the olive flavor pop among other ingredients.
