|Chicken Ragu with Soft Polenta
Virgin Olive Oil
Crushed Tomatoes
Boneless Skinless Chicken Thighs
Chicken Stock
White Wine
Mirplex (carrots, celery, and onion)
Fresh Rosemary
Dried Thyme
Chopped Fresh Garlic
Salt & Pepper
Polenta Ingredients
4 cups chicken stock
1 cup milk
1 cup corn meal
1 cup parmesan cheese
fresh parsley
salt & pepper
Directions:
1. Heat up olive oil in a pan, then add your chicken, and let it brown.
2. Next add in your Mirplex and let cook down.
3. Add in your fresh chopped garlic, fresh rosemary, dried thyme. Next add
your white wine, and let reduce. Add salt and pepper.
4. Next add in your crushed tomatoes, and chicken stock, just enough to cover.
Bring to a boil. Then cover and place in the oven to braze.
Polenta Directions:
1. Heat up 4 cups of chicken stock & 1 cup milk.
2. add in 1 cup corn meal. You will want to keep stirring occasionally.
Will take about 10 minutes.
3. add in a touch of vergin olive oil, add 1 cup parmesan cheese slowly.
Then add in your salt & pepper, and fresh parsley.

5. When you chicken is done brazing, add creamy polenta to a bowl, than on to of that add in your chicken and vegetables.
