Chicken Scallopini (VIDEO)

I make Italian Chicken Scallopini for dinner using sun dried tomatoes for great flavor and texture. This recipe is for two large servings.
Ingredients:
1 pound of chicken breast
salt/pepper
1/4 cup all purpose flour
2 or 3 Tablespoons olive oil
3 garlic cloves chopped roughly
1/2 cup onion chopped finely
3/4 cup chopped sun dried tomatoes packed in oil (drained)
2 Tablespoons chopped parsley
1/4 cup vermouth or white wine
3/4 cup frozen peas defrosted
1 cup chicken broth
1 and 1/2 tablespoon cold butter

Cut your chicken into slices, mine was 1/2 inch thick.
Salt/pepper/flour your chicken.
Saute around 4 to 6 minutes total depending on thickness.
Remove chicken and saute garlic and onion until soft, about minutes.
You do not want big pieces of onion as the garlic could burn and it would take so much longer to cook the onion.
Add your wine or vermouth and reduce to half.
Add your chicken broth (you can use extra) and add your peas and parsley.
Reduce for 5 minutes.
Return the chicken to the pan and cover, cook for 3 minutes.
Taste for salt.
Add the cold butter, then serve.

*Note* If you would like more sauce, keep some more chicken broth ready. If you do use more, I would take soft butter and an equal amount of flour and mix them. Add this to the sauce at the end a Tablespoon at a time.
