Learn how to make a DELICIOUS Rustic Italian Vegetable Casserole!

INGREDIENTS
6 medium potatoes
4 zucchini – sliced
1 bunch of celery – chopped
1 cup of rice
4 onions
diced tomatoes – 16oz can
romano or parmesan cheese – 1 cup
1 ½ tablespoons of salt
3 tablespoons of olive oil
3 cups of water

REQUIRED TOOLS
1 big pot (oven safe)! this thing is gigantic…
tin foil
cutting utensils

DIRECTIONS
this is a two layer casserole so divide your ingredients equally
slice potatoes, zucchini and chop that celery
build the casserole just like Nonna does in her video – you will make two layers
once the casserole is built, be sure to add 3 cups of water, poured along the far edge of the pot
cover the top of the pot with tin foil
bake at 400 degrees for 2 hours
remove foil
broil for 5 minutes or until the top is nice and crispy to your liking
