How to make Eggplant Alfredo with Italian Sausage and Mushroom Casserole (VIDEO)

New recipe for Jocelyn’s Cooking Corner Eggplant Alfredo with Italian Sausage and Mushroom Casserole.

Ingredients:
1 large eggplant
Quarter size white onion
Mild Italian Sausage
1 bottle Parmesan Garlic Alfredo sauce
1 packet Criminal Bella baby mushrooms
1 packet White sliced mushrooms
Salt
Pepper
Garlic powder
Grated parmesan and Romano cheese
Breadcrumbs
Red pepper flakes
Olive oil


Directions:
Preheat oven to 450 degrees.

Cook Italian sausage, drain fat in a pan.
Set aside for later.

Slice eggplant into 1 inch slices.
Cut onions into small pieces.
Wash mushrooms and place in bowl.

Pour Olive oil onto casserole dish.
Place eggplant slices into the dish as the bottom layer.
Add mushrooms on top as a second layer.
Add onions.
Add Italian sausage as a layer andcadd a teaspoon of garlic on different areas of the dish.
Sprinkle a small amount of salt on top.
Then add pepper, garlic powder and red pepper flakes.
Pour the Alfredo sauce on top if the casserole ans spread evenly with a rubber spatula.
Sprinkle the grated cheeses on top of the mixture and then cover with breadcrumbs.

Place into oven and cook for 40 minutes at 450 degrees.

Taste great with pasta or hot bread.
