Italian Potato Salad by Sophonie’s Kitchen (VIDEO)

As you might have noticed, this is my first ever cooking video. It is far from being perfect but I am a fast learner so with time and practice I can ensure you that it will get better!

Now, let’s talk about today’s video. The Piémontaise salad is an Italian classic. But it is also a French one (and my mom’s favorite salad).

It normally contains ham but since I don’t eat meat every day and that the day I recorded this video was one of these days, I made a vegetarian version.

INGREDIENTS AND INSTRUCTIONS
Serves 2
Prep: 20 min
Cook: 30 min
Rest: 1 hour

Nutrition Facts (per 1 serving):
Calories: 300
Fat (g): 11.4
Carbs (g): 30.9
Protein (g): 19.3

Ingredients:
400g of tomatoes
600g of potatoes
2 to 3 eggs
3tbs of pickles
150g of mayonnaise
Sea salt and freshly ground black pepper to taste


Method:
1. Peel, dice and cook the potatoes in salted water for 20 minutes. Hard boil the eggs at the same time for 10 minutes.
2. Once the eggs are cooked, place them in cold water to peel them more easily.
3. Dice the tomatoes, eggs and the meat you have chosen and place them in a mixing bowl. Slice the pickles and add them to the mix.
4. Cover all the ingredients with the mayonnaise, French mustard, salt and pepper and mix.
5. Place the bowl for at least an hour in the refrigerator before serving.
