Italian Roasted Mushroom Mix
Yields: 3 (1 cup) servings
o ½ lb cremini mushrooms, cleaned
o 1 cup cauliflower, cut into small florets
o 1 cup cocktail tomatoes
o 6 garlic cloves, peeled, chopped
o 1 Tb olive oil
o ½ Tb Italian seasoning
o 1/2 tsp black pepper
o 1 Tb dried parsley

1. Preheat oven to 400 °F
2. In a bowl add mushrooms, garlic and veggies. Drizzle with olive oil and then toss with seasonings until well combined
3. Dump veggies to a baking sheet and place in oven for 20-30 min or until mushrooms are golden brown and cauliflower if fork tender
4. Garnish with fresh parsley before serving.
