|This delicious Tuscan tomato salad is a fantastic way to use up those stale bits of crusty bread you might have lurking in your kitchen, which when soaked in the sweet tomato juices, becomes absolutely delicious!
Handful of fresh basil
4tbsp extra virgin olive oil, plus extra for drizzling
1tbsp salted capers, rinsed
300g (10 1/2 oz) stale sourdough or crusty bread
500g (1lb 2oz) ripe heirloom tomatoes (variety of shapes, colours and sizes)
10g (1/2oz) kalamata olives, pitted and sliced
1/2 red onion
1tbsp red wine vinegar
salt and pepper
