Italian Tomato Salad (Panzanella) | Rosie Foodie (VIDEO)

This delicious Tuscan tomato salad is a fantastic way to use up those stale bits of crusty bread you might have lurking in your kitchen, which when soaked in the sweet tomato juices, becomes absolutely delicious!

Ingredients:

Handful of fresh basil
4tbsp extra virgin olive oil, plus extra for drizzling
1tbsp salted capers, rinsed
300g (10 1/2 oz) stale sourdough or crusty bread
500g (1lb 2oz) ripe heirloom tomatoes (variety of shapes, colours and sizes)
10g (1/2oz) kalamata olives, pitted and sliced
1/2 red onion
1tbsp red wine vinegar
salt and pepper
