Low Carb Zucchini Lasagna Recipe | Delicious & Easy to make! (VIDEO)

Need to satisfy that Italian food craving but need to watch the carbs? This Low Carb Lasagna Recipe is ridiculously delicious and very kind to your waistline!

Ingredients:

500 g Lean Ground Beef/Turkey
1 tbsp Olive Oil
1/2 Large Zucchini
476 g Crushed Tomatoes
65 g Tomato Paste
1 1/2 tsp Minced Garlic
1/2 Red Onion
340 g Cottage Cheese
40 g Grated Parmesan Cheese

Here’s the recipe:

1 Pre-heat your oven to 175 C.

2 Brown your meat in your Olive Oil in a large stove top pan.

3 Cut 4 long and thin slices off your Zucchini. They should be the length of your baking dish.

4 Once the meat is brown, add in your Crushed Tomatoes, Tomato Paste and chopped Red Onion.

5 Mix everything and let it simmer for about 10 minutes.

6 Take out a baking dish and spread a layer of your meat sauce on the bottom. Then top with a layer of thinly sliced Zucchini. Spread a layer of Cottage Cheese on top of the Zucchini. Add another layer of meat sauce on top of the Cottage Cheese. Add your final layer of sliced Zucchini and top that once again with Cottage Cheese and Meat Sauce.

7 Sprinkle Parmesan on top and bake in the oven on 175 C for 20 mins.
