Minestrone Soup – One Pot (VIDEO)

A quick and easy one pot minestrone soup recipe. A delicious and hearty vegetable soup to warm you up in the winter months.

Heat oil in a large sauté pan. Add onion, celery and leek. Cook, stirring for 5 minutes or until leek is soft. Add garlic, carrot and potato, cook, stirring, for 4 minutes. Add tomato paste, cook, stirring, for 1 minute. Add tomatoes, stock and ½ cup of water. Boil gently for 10 minutes. Add pasta, simmer for 10 minutes, or until pasta and vegetables are almost tender. Add cannellini beans, kale and green beans, cook stirring for 2 minutes or until beans are cooked and bright green. Season to taste and scatter with parsley. Serve with parmesan and crusty bread.

Ingredients
1 tablespoon Woolworths Select Spanish classic olive oil
1 onion, finely chopped
1 stick celery, finely chopped
1 leek, halved lengthways and thinly sliced
1 garlic clove, thinly sliced
1 carrot, peeled & cut into 1cm dice
1 Golden Delight potato, peeled & cut into 1cm dice
1 tablespoon Woolworths Select tomato paste
400g can Woolworths Select Australian diced tomatoes
1 litre Woolworths Select salt-reduced chicken stock
½ cup Woolworths Select macaroni pasta
420g can Woolworths Select cannellini beans, rinsed & drained
2 kale leaves, stems removed, finely shredded
100g green beans, cut into 2cm lengths
2 tablespoons chopped fresh continental parsley
Shaved parmesan cheese & warmed crusty bread, to serve

Directions:
1. Heat oil in a large sauté pan or casserole pan over medium heat. Add onion, celery and leek. Cook, stirring for 5 minutes or until leek is soft. Add garlic, carrot and potato, cook, stirring, for 4 minutes.
2. Add tomato paste, cook, stirring, for 1 minute. Add tomatoes, stock and ½ cup of water. Bring to the boil. Boil gently for 10 minutes. Add pasta, simmer for 10 minutes, or until pasta and vegetables are almost tender.
3. Add cannellini beans, kale and green beans, cook stirring for 2 minutes or until beans are cooked and bright green. Season to taste and scatter with parsley. Serve with parmesan and crusty bread.

Tip1: You can add a tablespoon of pesto at the end for extra flavour
Tip2: This soup is a great way to use seasonal vegetables, swap out carrot, potato and kale for other root vegetables and leafy greens.
Tip3: You can freeze this soup in airtight containers for up to 2 months to take to work.
