Soul Food Risotto (VIDEO)

This is a how to video on making a fusion style recipe with Soul Food and Risotto. Enjoy!

Soul Food Risotto Recipe:

-1 ½ Cup of Arborio Rice
-Salt & Pepper
-1/2 Cup of dry white wine
-1/2 Cup of freshly grated Parmesan Cheese (and a little more for garnish)
-Fresh Italian Parsley (chopped for garnish)
-1 Can of Stewed Unsalted Tomatoes (drained)
-1 Cup of Low Sodium Collard Greens (drained)
-1 Cup of Smoked Turkey (chopped)
-6 Tbs of unsalted Butter
-A pinch of Saffron
-1 medium Onion (Diced)
-6 cups of Chicken Stock or Broth


1. 1st on medium heat in a non-stick medium pan, melt 2 tbs of butter and add onion and saffron and stir until onion softens for about 3 to 4 minutes.
2. Add rice, stir and cook until coated with butter for about 3 minutes. Then add wine and cook until the wine cooks down.
3. Using a measuring cup, start adding ½ a cup of stock/broth and cook on medium-high and stir while rice is cooking; until the stock/broth cooks down and repeat by adding ½ a cup of stock/broth each time.
4. Start tasting after 15 to 20 minutes to see if rice is tender. If the rice is not tender, continue doing the process from #3 until rice is to your liking. Rice should not look dry or soupy when it is done.
5. On low heat, add 4 tbs of butter to rice, then sprinkle in salt & pepper and melt down butter into the rice. Add in collards, stewed tomatoes and turkey and cook for 1 minute.
6. Turn off the heat and fold in Parmesan Cheese. Sprinkle parsley on top.
7. Plate and top with more Parmesan Cheese (optional). Serve & enjoy!
