Vegan Ventures: Hearty Minestrone Soup! (VIDEO)

IMPORTANT: I forgot to add footage/instructions for adding the water! Add it at the same time as the canned tomatoes. 🙂

Heya!
So I don’t know about you guys, but I always have difficulty finding vegan foods that feel warming and filling in the middle of winter. Soups are my favourite, and this is one of the easiest and tastiest soups I can make, so I hope you enjoy it too!

Ingredients you’ll need (this makes a big pot, probably around 10 servings):
2 tablespoons of oil (I used olive, you can use whatever you prefer)
2 cloves of garlic
1 chopped onion
1 big stalk of celery
1 big carrot
1 can of tomatoes
3 tablespoons of tomato puree
1 stock cube (I used vegan chicken, but vege or vegan beef stock is fine too)
1 big teaspoon of Marmite.
1 can of chickpeas.
1 packet of pasta (I like shells best for soups)
4 cups of water (add more if it’s looking too thick)
Herbs and salt and pepper to taste.
