How to Grill Veal Chops (VIDEO)

Here, Chef Michael Mina prepares his veal chops by soaking them overnight in a brine that has traditional ingredients, like salt, onion, fennel seed and bay leaf, and some more non-traditional ones like brown sugar and orange juice. Once they are brined, Michael grills the veal chops to give them a savory, charred and smoky flavor.
