How to make delicious Italian ciabatta (VIDEO)

Ciabtta is a classic Italian bread, this recipe is pretty easy and always yields a great result.
The bread is excellent for sandwiches but also as a side for all kinds of dishes.

Full recipe:

Poolish
300 g / 10,5 oz cold water
7 g / 0,3 oz yeast
300 g / 10,5 oz flour
10 g salt

Dough
480 g / 17 oz flour
300 g / 10,5 oz water
12 g / 0,4 oz salt

Poolish
Disolve the yeast in the water
mix in flour and salt and cover the bowl. Let it sit on the counter for a least 8 hours.

Dough
Add flour, water and salt to the poolish and make sure it is kneaded thoroughly on a mixer. It will take some time but it should let go of the sides of the bowl and cling to the hook when it is done. You can move the dough to another bowl brushed with a little olive oil, which will make it a little easier to get out or just leave it.
Cover with plastic and let it prove for 2 hours.

Put a baking stone in the oven and heat the oven to 240 C / 465 F

Pour the dough onto a floured table, be careful not to squeeze any air out of the dough. Hack the dough into smaller pieces with a metal scraper and put them on a baking-plate with baking paper.
Pull the baking paper with the ciabatta rolls onto the hot baking stone and bake for about 18-20 minutes.

Cool for 30 minutes on a grill

Ciabatta can be frozen. If unfrozen for a minute in the microwave and then toasted it’s almost as good as when straight from the oven.
