Creamy chicken with mushrooms – recipe (VIDEO)

Today we’ll be cooking together a delicious main course, made with mushrooms and chicken breast, dipped in a tempting cream sauce: the creamy chicken with mushrooms.

Today I’ll suggest you an original and refined way to cook chicken: the creamy chicken. It’s a cheap main course, made with chicken bites and mushrooms, enriched by a hearty cream sauce. But let’s see together what ingredients we’ll need:

• 1 pint (500 ml) of chicken broth
• 1,3 lbs (600 g) of chicken breast
• 1 big onion
• 1 clove of garlic
• 3-4 thyme sprigs
• 2 tsp of mustard
• pepper / salt • 2 ½ tbsp (20 g) of flour / 5 tbsp (70 g) of butter
• 14 oz (400 g) of field mushrooms, small is better
• 2 tbsp of extra virgin olive oil
• 1 glass of white wine
• 1 cup (250 ml) of heavy cream


Let’s prepare the creamy chicken with mushrooms:

Begin to prepare the creamy chicken by putting 2 tablespoons of oil and butter in a frying pan; then add the chopped onion and garlic and cook until soft for about 10-15 minutes on a low flame: the onion and the garlic must not colour, but only get soft until transparent. In the meanwhile, cut the chicken into cubes… and add in the frying pan. Raise the heat and brown everything for about 5-6 minutes, after that add salt and pepper.
Now add the mushrooms, which have been previously washed and cut into halves… and cook with the chicken for about 5 minutes, then add a glass of wine; let everything cook on a low flame.
While the chicken with mushrooms is cooking slowly, put the remaining 3 tablespoons of butter and the flour in another saucepan; melt everything and, when the flour has browned slightly, add the chicken broth. Stir and let thicken on a low flame.
When the broth and flour mixture has thickened, add it to the chicken. Stir a bit… then add the mustard… the thyme leaves… and lastly the heavy cream. Cook still on a low flame until the cooking sauce thickens.
