Hasselback Chicken Caprese (VIDEO)

This one is very simple and easy.
You will need chicken breast halves, mozzarella cheese, fresh basil leaves and sliced tomatoes.
I tried drizzling some of mine with Italian dressing and some others with a balsamic vinegar reduction.
Make horizontal deep slices about 1/2 inch apart on a chicken breast half. Don’t go all the way through the chicken (duh).
Place a fresh basil leaf, a piece of thinly sliced tomato, and a piece of mozzarella cheese in each slot.
Drizzle with balsamic reduction or Italian dressing.
Bake at 400F for about 30 minutes until your chicken reaches 165F.

How do you make a balsamic vinegar reduction? OMG easy.

Check out this recipe:
Stir 1 cup of balsamic vinegar and 1/4 cup honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 10 minutes. Allow balsamic reduction aside to cool. Store in the refrigerator. It should be thick like maple syrup after it has cooled. Try not to eat with with a spoon.
