Yogurt with berries, granola and Nutella recipe (Bicchiere di yogurt ai frutti rossi, granola e Nutella)

The pleasure of a moment can hide in a muffin, a small dorayaki, a cake square or … in a glass. This time we have combined the freshness of Greek yogurt and the creaminess of Nutella® to create a perfect spoon dessert for breakfast or a snack: glass of red fruit yogurt, granola and Nutella®. Like Yin and Yang, the two creams embrace each other to create a surprising dessert in its simplicity. At each tasting, the softness of the cream based on Greek yogurt, banana, red fruits and oats will alternate with the crunchiness of the granola with raisins and pecans. Taste, energy, gluttony: the glass of red fruit yogurt, granola and Nutella® is the perfection of breakfast.

Ingredients for 3 170 ml glasses

  • Greek yogurt 140 g
  • Fresh liquid cream 100 g
  • Bananas 1 (frozen)
  • Blueberries 20 g (frozen)
  • Raspberries 20 g (frozen)
  • Blackberries 20 g (frozen)
  • Acacia honey 20 g
  • Oat flakes 20 g
  • Nutella® 45 g

For the granola

  • Oat flakes 10 g
  • Pecan nuts 30 g
  • Raisins 10 g
  • Muscovado sugar 15 g

For garnish

  • Blueberries 4
  • Raspberries 2
  • Fresh mint, to taste

Preparation

To prepare the glass of red fruit yogurt, granola and Nutella®, start with the granola: rinse and then soak the raisins in hot water, 10 minutes will suffice (1). Then drain it and squeeze it. Coarsely chop the pecans (2). Mix the drained and squeezed oats and raisins (3)

Muscovado sugar (4) and chopped pecans (5). Stir and sauté over medium heat for 3 minutes (6): the mix must be lightly toasted and caramelized. Then set aside to cool.

Prepare the yogurt cream: blend the frozen banana into pieces, the Greek yogurt (7), the oats (8), add the frozen blackberries (9)

frozen raspberries (10), frozen blueberries (11) and honey (12).

Blend everything to obtain a homogeneous cream (13). Whip the cream until stiff with the electric whisk (14) and add it gently to the cream (15). Mix from bottom to top with the spatula. The cream must rest in the fridge for at least 1 hour.

Meanwhile, place Nutella® in a sac-à-poche with a star nozzle of about 6 mm in diameter and fill each glass in this way: a layer of granola (16), one of yogurt cream (17) a layer of Nutella® (about 7.5 g) (18).

Then again yogurt and fruit cream (19), then again Nutella®, placing it on one side of the glass to create a decorative layer (20). Finish each glass with 1 raspberry, 2 blueberries, granola and mint leaves to taste (21)! The glass of red fruit yogurt, granola and Nutella® is ready!

Storing

The yogurt cream can be kept in the refrigerator in an airtight container for 1-2 days.

The granola can be kept 3-4 days in an airtight container.

Freezing is not recommended.

Tips

You can enrich the glass with flaked almonds.

You can also make yogurt cream with wildflower honey.
