A Panini is a classic Italian grilled sandwich made with a special bread, stuffed with vegetables or meat or both together. It is then warmed in a Panini Press.

If you don’t have a Panini Press, you can easily make this sandwich on a heavy cast iron skillet by keeping some heavy weight on it so that the vegetables and meat gets cooked to perfection and grill marks appear on the sandwich.

I have made this sandwich with multi-grain bread and it is loaded with roasted eggplant, red onion, bell pepper, carrot, sprout moong (lentils) and topped with slice cheese. You can use any cheese of your choice.

Instead of the regular pepper powder, I have used the magical Indian Tandoori Masala powder, little bit since it is a veggie sandwich. If you use chicken or lamb for this recipe, you can use a bit more quantity of the masala powder.
